Farm to School Taste Tests are ‘Growing’ Great

Farm to School taste tests have certainly looked different over the last year, however, the excitement of students trying new things remains the same. This fall, students in Broome and Tioga counties have had the chance to try two farm to school recipes: Parmesan Roasted Cauliflower and Maple Roasted Brussels Sprouts & Carrots. Elementary students in Johnson City kicked the year off with cauliflower, and the overall feedbackwas an enthusiastic two thumbs up. Our team decided to focus solely on parmesan cauliflower after previous taste tests revealed that our buffalo cauliflower recipe was too spicy for this age group’s palates. Several students told staff that this was their first time trying cauliflower, while others were eager to grab second, third, and even fourth samples. These cheesy vegetables were absolutely a delicious and nutritious winner. Owego elementary students were split into two groups when telling us their thoughts; it was team brussels sprouts versus team carrots. The younger students indicated that they loved the maple roasted carrots, but weren’t huge fans of the sprouts, while older students told our team the opposite. In a similar fashion to the cauliflower trial, many students gave sprouts their first try, telling us “I didn’t know I liked brussels sprouts!”. In the future, preparing the vegetables separately might allow students to pick and choose which roasted veggie they’d like to fill their tray. Broome-Tioga BOCES Rock on Café, Food and Health Network, and Cornell Cooperative Extension are happy to be back in cafeterias serving students exciting new foods! Photo Credit: Julie Raway
